What's cooking/baking: Part 2 (Salmon wellington,Sweet potato pie,Chrissy Teigen's 'Cravings')

There's a lot of cooking and baking videos on Facebook nowadays. Also a lottt of great cookbooks. I love trying out new recipes so I definitely watch a lot of cooking videos/shows and read cookbooks. I have so many cookbooks/baking books!

1.Salmon Wellington

One day while I was browsing Facebook, I saw this video recipe on salmon wellington by Tasty( by Buzzfeed) and I knew that I had to make it.

I bought all of the ingredients (a good salmon fillet is the key) which was pretty pricey but it was so worth it. The only thing that I couldn't get was spinach so I used red spinach instead which worked just fine. The recipe is on point! 2. Patti La Belle's Sweet Potato Pie

Months ago, back in December last YEAR(totally forgot to blog about it!!), I baked a really delicious sweet potato pie after I saw this video below:

I knew that when I saw that video, I have to find the recipe and bake it myself..because i've never seen it being sold anywhere. Let me tell you that it's very decadent. It has a very buttery flaky crust and the filling is just sinful.

Something that you don't expect from sweet potatoes. It's definitely a pie that's meant for sharing as one slice is very filling. You can try to bake the pie from this recipe and it makes a very beautiful pie:

3. Chrissy Teigen's Cravings cookbook

I love Chrissy Teigen! She's super feisty-- you should follow her on twitter. But not many know that aside from being John Legend's wife and a model, she loves to cook and eat. She actually have a food blog that I love to read though she rarely update it nowadays. She even took a course at Le Cordon Bleu..if I'm not mistaken (she blogged about it) and she always shows what she's cooking on her instagram.

So naturally when she came out with her own cookbook, I knew I had to get it!

I've only tried two of her recipes and I love both of them.

One was her Chinese Chicken Salad with Crispy Wonton Skins and another was Chunky Creamy Mushroom Soup. I love how her recipes are simple but also delicious.

The salad was just so yummy and filling. It was my first time using hot mustard (it's powder form) and it packs a punch! The crispy wontons on top also add a crunch to it and is so addictive.



I'd definitely make this salad again!In fact, I'll be making it again this week :)

4. Bakinggggg

As you know, I love to bake.

During ramadhan I baked..40 jars of chocolate chip cookies which were ordered by my family and friends. A lot considering that I have a full time job as well.

Victoria sandwich is not a sandwich, but a cake and one that I love to bake because it's a crowd pleaser. You have a golden buttery sponge, layers of strawberry/raspberry jam (sometimes I put a layer of lemon curd as well) and freshly whipped cream (please don't use the one from the spray can!).

I baked it thrice recently. One for mama's birthday back in April, one for my office buka puasa potluck and another was for raya high tea with our family members.

Apple crumble
I've never ate or bake apple crumble before. But one day I did and I love it! It's just so warm and comforting. Definitely one of my favourite dessert to make now. It's so simple to make that I definitely won't buy it outside haha

5. More Cooking!

One day, I was feeling really poorly( sick) so my dear husband cooked rice porridge all by himself. The first pot, he burned the rice porridge because he left it on the stove while picking up our nieces from their pre school haha. He had to cook it all over again. But I just love it!

Croquettes!
I cooked ikan bilis bawang(my favouriteeee simple dish) and stir fried broccoli&bok choy to go along with the rice porridge. We ate so many bowls of it!

I bought a lot of japanese sweet potatoes because it was selling for cheap at the supermarket. I boiled a lot them, mashed it up and mixed it with some daging dendeng, chopped onions,peppers and scallions..a lil bit of salt and pepper..dipped it in egg and coat with breadcrumbs. I freeze them so that I can have croquette anytime!
Fish and chips
It's hard to find tartare sauce at the supermarket. So I made it myself and it's super easy! For dinner one night we had fish and chips with a side of caesar salad and sweet potato fries with my homemade tartare sauce for lunch. Yummy!
Kerabu kangkung!
Jemari is one of my favourite Malay/Thai restaurant. Their tomyam is soooo good but I love their kerabu kangkung. So one day I tried to replicate it. The batter wasn't as crunchy as Jemari but it tastes similar! For the sauce it's basically a good bottle of Mae Pranom vegetarian sauce and I added toasted sesame seeds as well.
