Lasagna Recipe

This recipe is for Rahika.Sorry because I'm not specific when I'm cooking compared to when I'm baking(because if you're not precise in baking,it won't work..hehe).Lasagna consists of layers of bolognaise sauce,bechamel sauce & lasagna sheets.It's very rich & delicious.Definitely not for those who's on diet!!:)

Lasagna

Lasagna sheets(my tip:boil them until they're halfway not like cardboard anymore..as in not too hard and not mushy!)

Grated cheddar or mozzarella(for the last part)

Bolognaise Sauce(this recipe of mine makes a LOT of sauce!)

2 cans of tomato puree
1 can of tomatoes(take it out & mash them with a fork or a potato masher) OR around 5 fresh tomatoes that has been covered in boiling water,peel the skin & chopped into cubes
2 packets of Ramly mince chicken or beef or any brand
1 can of button mushroom--slice into half
1 stalk of celery--diced
1 carrot--diced
1 big onion--diced
4 to 5 cloves of garlic--crushed & diced
A dash or 2 of dry oregano&basil(I use fresh cos' my mum plants them but dry is good too)
2 bay leaf
A dash of black pepper
Lots of sugar(to counter the acidity of the tomatoes)--around 5 tablespoon(don't worry it's a big pot of sauce!)
Salt

Heat the oil & fry HALF of the garlic.Add the mince chicken or beef & fry until cooked.hehe.Set aside in a bowl or plate or whatever.

Heat some oil in a big pot,add the remaining garlic & diced onion.Add the mushroom,celery,carrot & herbs.Stir it all together for a few minutes.Add the canned tomatoes.Stir,add the chicken.Stir well & then add the 2 cans of tomato puree.Turn down the stove(kecikkan api).Add sugar,salt & black pepper to taste.Taste it!!Add more sugar or salt if you like.Close the lid of the pot and let simmer for 15-20 mins.Ready to serve!!Oh,take out the BAY LEAF at the end(because it's bitter if you put it too long).


Bechamel Sauce(so sorry because I don't measure ingredients!!)

3 cups of milk--around 600 ml
1 stalk of spring onion(titik dgn lesung!)
1 carrot,sliced
Half of an onion,sliced
1 bay leaf
1/3 of Buttercup
1 & 1/2 cups of flour
Pinch of sugar & salt

Heat the milk in a saucepan until boiling.Turn off the heat.Add the spring onion,carrots & onions & bay leaf.Let the flavor infuse for 15 minutes.Then,sieve the milk & throw out the other ingredients that was infused in the milk(or you can save them to make soup).Set aside the milk.

Heat a pan with the butter until it melts.Add some sugar & salt.Add the flour.Make sure the heat is medium.Mix the flour & butter together until it forms into a paste.Add the milk & use a whisk & whisk the mixture until it becomes smooth & thick.It should be custard like,not watery.It it does,add more butter & flour to thicken.Set the bechamel sauce aside.


LASTLY

Use a big & deep square shaped pan that's line with a huge sheet of tin foil(to cover the lasagna later).Put a layer of the bolognaise sauce,2 sheets of lasagna side by side,more bolognaise sauce on top,then bechamel sauce and layer it as many times as you want.Top it all of with grated cheddar or mozzarella,wrap it nicely in the tin foil & baked for 20 mins or so..Enjoy!!
